Lunch for 3

Watercress salad with Pinenuts  

Bunch of watercress (washed)
1 washed cucumber
1/2 red cabbage (grated)
100 gr. pinenuts
3 tablespoons olive oil
3 tablespoons balsamic vinegar
3 fresh leaves of basil
salt and pepper to taste

Slice the cucumber and grate the red cabbage in a food processor. Divide the watercress leaves over 3 bowls and add the veggies. Roast the pinenuts and sprinkle on top. Mix olive oil and balsamic together and add pepper and salt if needed. Divide salad dressing over the bowls and place basil leave on top!
