Red Pepper Frittata with Sweet Potato

Red pepper with Frittata and Sweet Potato

4 eggs
1 red pepper
1 onion
1 clove garlic
1 tbsp olive oil
1 tsp. herbs of choice
1 large boiled sweet potatoes
handful of fresh coriander

Cut the onion and press the garlic. Wash and cut the pepper in small pieces. Heat olive oil in a frying pan and cook onion for 2 minutes until translucent. Add garlic to the pan. Break the eggs in a bowl and add any herbs of choice. Nice combinations are turmeric, curry and cardamom OR basil, oregano and thyme. Place pepper in frying pan and add egg mixture. Turn heat on low heat and place the lid on top. Let sit for 10 min until frittata is fully cooked. Add pepper and salt to taste and enjoy with sweet potato and fresh coriander leaves.
