Off to a good start with Coconut and Persimmon

A good start is half the work. Although some people do very well without breakfast, I am not one of them. I like to start the day with a breakfast that keeps me satiated for a while without wanting to go straight back to bed afterwards. What does that look like then? Plenty of vitamins for good energy, some protein for blood sugar control and good quality fat to keep you full. See the result here:

Coconut Bowl with Persimmon fruit:

Ingredients: 

6 tablespoons coconut yogurt (Greek style) or regular yogurt
1 tablespoon pumpkin seed oil
6 tablespoons organic blueberries (washed)
1 persimmon fruit (sliced)
1 handful of walnuts
2 tablespoons of spelt muesli or sugarfree homemade granola.
cinnamon and/or spirilina on top.

Instructions:
Fill a nice bowl with coconut yogurt or regular yogurt and put the rest of the ingredients on top. Create time to consume this  breakfast and make sure to chew well and avoid distraction.
