Morning pancakes

These pancakes are a filling to start your day. The mix of oat flour and chickpea flour keeps them firm and moist at the same time.

For 6 pancakes:

Ingredients:

15o grams of oat flour
150 grams chickpea flour
1 teaspoon baking powder
1 tablespoon maple syrup
150 ml pea milk – (Sproud barista milk)
little bit of salt

Mix the first 3 ingredients together in a bowl. Then add the last 3 and mix into a pancake batter.

Heat some butter or olive oil in a small frying pan. Pour enough batter for 1 pancake into the pan and only flip it when bubbles form in the batter. Brown the other side as well. Continue until the batter is used up.

Delicious with some jam, fresh fruit and Brazil nut yogurt.
