Glutenfree Spiced Rhubarb Cake

This quick to make spiced rhubarb cake or bread is filling and delicious. With a mix of gluten free flours you whip up this cake satiating a sweeth tooth without any added sugars.

Ingredients:

100 grams of almond flour
100 grams of buckwheat flour
200 grams of oat flour
1 tbsp of baking powder
3 tablespoons of spiced powder (koekkruiden)
1 tablespoon of cinnamon
4 eggs clutched
350 grams of rhubarb out of a jar
5 tablespoons of olive oil
2 handful of mixed nuts and raisins

Instructions:

Preheat oven to 180 degrees.

Combine all the dry ingredients (flours, baking powder and spices) in a bowl and stir. In a different bowl you mix the wet ingredients (eggs, rhubarb and oil). Add wet ingredients to dry ingredients and mix well. Stir in the nuts last.

Grease a cakeholder with some olive oil and put the ‘dough’ in the holder. Bake for 40 minutes or so or until inside of the cake is dry. Let the spiced cake cool for 15 minutes in its holder, then remove and let it cool down entirely. Enjoy!
