Beet-Ginger-Fennel Boost

This nicely coloured breakfast with beet, fennel and ginger is a fibrous boost for your digestive system. Fibre is food for our gut bacteria. Beet contains betalaine, a compound which helps to regulate inflammation in our gut. Fennel and ginger are both soothing roots/herbs to alleviate any bloating or gassiness. Fennel seeds and fresh ginger are steeped into a tea to bring out the digestive benefits.

Ingredients:beet ginger fennel

1 large raw or cooked beet
1 teaspoon fennel seed
1 teaspoon grated ginger
350 ml steeped tea of fennel and ginger
3 tablespoons kefir or coconut yogurt for a vegan variant
2 dates
2 figs
1 tablespoon raw cacao
1 teaspoon cinnamon
1/2 teaspoon vanilla extract powder

Boil water to about 80 degree Celsius and steep fennel and fresh ginger in hot water. Let sit for 5 min. Meanwhile add all ingredients to a strong blender and blend for 30sec. Top with granola or crushed nuts and coconut flakes for some crunch. Remaining tea can be used for an extra cup of ginger/fennel dose.
