Cranberry Compote
Cranberries are truly immune boosters, rich in phytonutrients such as anthocyanins and flavonols. Yet we need to eat the whole fruit and not the dried sweetened variation.
This compote tastes sweet and tart at the same time due to the mixture of applesauce.For extra creaminess you can add some organic yogurt.
1 bag of cranberries
1/2 jar of unsweetened apple sauce
enough water to cover the cranberries
1/2 tablespoon of cinnamon
handfull of walnuts
Instructions:
Place cranberries and cinnamon in a saucepan and add enough water so that the cranberries are covered. Bring to a boil and then reduce heat to let cranberries simmer for 10 min. Once the cranberries are soft and mushy, add applesauce and top with some walnuts.
Creates multiple servings.
