buckwheatpancake

This easy to make satiating breakfast is quick to make and very nutritious. Select the fruit you have on hand and vary with other toppings. I choose hemp seeds, walnuts, coconut flakes and cinnamon.

Ingredients for 4 pancakes

100 gr. buckwheat flour (or blend your own by using whole buckwheat)
300 ml water
2 eggs
coconut oil
bit of salt

Toppings:

½ banana chopped up
½ an apple sliced
5 strawberries sliced in half
1 tablespoon of almond butter
1 tablespoon of walnuts
1 tablespoon of coconut flakes
1 tablespoon of hemp seeds
1 teaspoon of cinnamon

In a bowl mix salt with flour. Whisk eggs in a bowl and add water. Then add wet ingredients to dry ingredients until it becomes a smooth mixture. Heat some coconut oil in a frying pan and let the pan become really hot. Then add 1/4 of the batter and make 1 pancake out of it. Continue until finished, spread almond butter on top and add rest of the toppings!
