Avoid January Blues with Greens
Ingredients:
1 large head of green lettuce – washed and spun dry in a colander
5 marinated artichokes – can be bought at the market
1/2 red organic Bell pepper – washed and chopped in small pieces
5 cherry tomatoes – washed and sliced in half
1/2 block (100 gr) of feta cheese – cut thin slices
Balsamic dressing:
6 tablespoons of olive oil
1 tablespoon of water
1 tablespoon balsamic vinegar
1 teaspoon mustard
1 teaspoon of honey
Instructions:
Layer everything in a large salad bowl, starting with the lettuce and followed by the rest of the ingredients. Pour ingredients of the dressing in a mason jar and shake until a smooth dressing exist. Add the dressing by the teaspoon and stir the salad just before serving.
